Physics.... WHAT?!?

General Physics ~

“This course will try to relate physics to other areas of knowledge and discuss science in general, and physics specifically, as part of the concept of culture and time”

Say what?!? Oh boy. Physics. Yes, me.. I’m a 42 year old going back to school. See, what happened is this. I got my Associates of Science Degree in Criminal Justice and my Associates of Arts Degree in Behavioral & Social Sciences back in 2007. At that time, I had every intentions of pursuing my Bachelors in Criminal Justice. I decided to take a semester off since I had been going full-time for two years straight, some semesters taking 21 Units… (yes… I had to petition for the extra units and they amazingly approved it!!). Well, one semester break turned into two semesters…which led to three… and then four… and the rest is history. I was right on track to transfer to California State University Stanislaus with the intent of receiving my Bachelors by the end of Fall 2009.

Needless to say, that didn’t happen. I took the time off in the beginning to focus on my Cake Decorating Classes. At that point, I’d been teaching 4 nights a week, three classes every evening. Slowly but surely, my Cake Decorating Business was getting more business than I anticipated, so I kinda just focused on that.

Well, all that procrastinating did me a bunch of good. NOT. What happened?!? Oh.. I lost my Catalog Rights, therefore, instead of only the two transferrable classes I needed to take, I now have 4 PLUS a Lab. AND…. of all things, PHYSICS is one of those classes.

Do you know how much I detest any type of Science? Seriously… I don’t even like any Science Fiction movies at all! Never got into Star Trek. The closest to Sci Fi for me was "Back to the Future”. Ha ha ha! This will be me the very first day of class:

To make matters worse, since I’m a degree holder, I don’t get any type of priority when it comes to Registration. So, after all the Priority people register, then the Returning Students register, it’s my turn. What classes are going to be left?!? NOTHING I NEED. Despite what the photo below says, in this case, it's NOT OKAY to be last in line!!!

The classes I really needed were all full and I’m wait listed on one of them. Just one. The rest were already closed and there had reached it's limit on wait listed students. So, the one that I'm wait listed on is my Math Class. Actually, I'm okay if I don’t get into it this semester because I’m not sure if I can handle a Physics class with a Lab AND a Math class. (Which by the way, meets Monday thru Thursday) It’s bad enough my Physics class meets Monday, Wednesday and Friday, with the lab on Thursdays. (Yes, my Date Day Thursdays) Ugh.

All of this because of what?!? My goal to obtain my Bachelors Degree in Criminal Justice. And just what in the world will I do with that Bachelors at say….45 years of age?!?

My 20 year old daughter told me a while back, “Mother, we’ll be graduating with our Bachelors Degree about the same time”. Ah…….. out of the mouth of babes. :)

So, wish me luck people!! (And keep your fingers crossed that my books for this Physics Class and this Math Class isn’t like $1,875.00)

Tasty Tuesday!

Stuffed Zucchini Boats

Ingredients:

1 zucchini, about 12 inches long (or 2 6-inch)
2 tbsp. olive oil, divided
½ cup onion, chopped
3 cloves garlic, minced
½ cup mushrooms, chopped
1 lb. ground beef, sausage or ground turkey
2 tbsp. dry white wine
2-3 tomatoes, seeded and diced
3 tbsp. chopped fresh basil
1 tsp. minced fresh rosemary
¾ cup grated Parmesan cheese
1 egg, lightly beaten

Directions:

Cut zucchini in half lengthwise. Scoop out insides, leaving a shell about ¼-inch thick. Reserve about half of the insides.

In a medium skillet over medium-high heat, heat 1 tablespoon of olive oil. Sauté the onion and garlic until tender, about 4-5 minutes. Add the mushrooms and reserved zucchini insides to the skillet and sauté another 2 minutes. Remove from the heat.

Heat the remaining tablespoon of the olive oil in a skillet over medium-high heat. Crumble in the ground beef, sausage or ground turkey and cook until lightly browned on all sides, stirring occasionally. Stir in the cooked onion and mushroom mixture. Add the wine to the pan along with the tomatoes, basil and rosemary. Cook for 1 more minute. Drain of any excess fat, remove from heat and set aside to cool.

Preheat the oven to 375° F. Once the meat mixture has cooled a bit, mix in the Parmesan, egg, salt and pepper. Fill the zucchini shells with the mixture. Fill a baking dish with ¼-inch of water. Place the filled zucchini shells in the pan and bake in the preheated oven for 40 minutes, until golden brown. Remove the zucchini from the pan and serve immediately.

Meandering Mondays!

Welcome to:

Meandering Mondays

Meandering Mondays is where I share with you a couple of different Blogs that I've recently came upon and/or have been following for awhile. I enjoy reading blogs of all kinds! Last week, I shared the blogs Slam Dunks and A Few of My Favorite Things. I hope you all took the time to check them out!

This week, I'll be featuring two blogs again! The first blogger is Meg at O. is me.   Here is Meg's "About Me" taken from her blog:
I'm a highly energetic cupcake-obsessed high school theatre teacher/director. I actually teach at the high school I attended as a young dame and teaching with my favorite theatre teacher! It's a blast. I love my job and my crazy awesome students! I direct up to 3 shows a year, and that definitely keeps me busy. I'm super artsy fartsy, so my job lets me explore that outlet on a daily basis. Lord knows I need to get that out of my system. I'm also a classically trained singer (having studied it in college along with theatre), and I sing with the Houston Symphony Chorus. I'm interested in a multitude of things, which definitely gives me a reason to blog. I mean, who wouldn't want to know my opinion or insight?

Aside from my artsy-ness, I consider myself a huge foodie. I'm talking obsessed. I'll try anything. I love cooking, dining, and trying new restaurants, especially ones off the beaten path! Side note: cupcakes are the perfect food. Seriously. I also consider myself a bit of a health nut. I'm into nutrition and fitness (although sometimes I get lazy on the fitness part... don't we all?). Even though I am waaaaaay into food, I try to develop ways to incorporate my favorite things in moderation and in a healthy way (aside from cupcakes). I love beauty products -- getting my hair done, trying new makeup and skincare. I try to take good care of myself, since it's the only "me" I have. I also love to travel. I've been many different places including South America and Europe, and I am hungry for more!

I'm married to a wonderful man named Greg O. We got married on July 25, 2009. He's a sports lovin', former New England boy working in the insurance industry. He's extremely intelligent, well-spoken, intuitive, and being from MA, he's hot and looks like a Kennedy. His logic and sporty-ness balance out my emotion and artsy-ness. He is the perfect man for me! He always makes me laugh and he is my best friend. We love to travel together. Greg and I have a new kitty named Dexter O. He's an Abyssinian, which is the coolest breed of cat ever!! Dexter is very much a part of our family. He is well-loved and we even take him on weekend trips because he is that awesome.

Meg blogs about everything! I love that she's an ARTIST, and a DANCER. And most of all, she was a BEAUTIFUL BRIDE who just celebrated her 1 year anniversary!!
(Seriously folks, you should click on the "Dancer" link above, and you'll see the most amazing Happy Dance ever!!)

The second blogger is Pam at For the Love of Cooking.  Pam shares all of her delicious recipes on her blog, along with beautiful, and helpful photos!!  Here's Pam's "About Me" taken from her blog:
... I am a stay at home mom with two children who inspire me to be a better cook. I love using fresh ingredients, organic when possible, and I like to experiment with different tastes and textures. I try to keep my recipes lower in fat but still tasting great. My favorite hobbies are cooking, photography and blogging so I decided to combine them and create a recipe blog. It has been a wonderful way to organize my recipes and share them at the same time. A big thank you to my amazing husband Chad who has helped me become a better photographer.

Please be sure to stop by these blogs and give them some blog love!

My Week All Wrapped Up ~ and FOOTBALL!!!

Sunday Strolling Blog Hop

While it was a beautiful week, weather wise, I must say it was a very 'unproductive' week for me. It was my first full week with Duke ~ and he was a joy!! I thought it was going to be a hellacious time sleeping at night....or having to wake up every two hours to take him out potty....or him going potty everywhere around the house. But it wasn't bad at all!!

Tuesday was Duke's first Vet's appointment. He did rather well for being so scared!! Of course, everyone was just tickled pink and fussy over how cute and small he is! He weighed in at 2.14 lbs, got his 2nd set of shots and his nails trimmed. So overwhelming for a new puppy.

Our Date Day Thursday was certainly different this week, You can read all about it HERE and I'm actually fine with changing it up from time to time. In fact, I think going for a walk mid-morning is not so bad after all. Especially when going for lunch is included in there!

Pretty much the week was just blah. Nothing exciting planned, nothing exciting happened. Just another 7 days all rolling into one.

HOWEVER.... do you know what's coming up?!? What is the one thing I'm most passionate about in the Fall?!? Come on now!! Here's a hint.....................

That's right! FOOTBALL Season is coming!! Pre-Season starts in a couple of weeks and I AM OVER THE TOP EXCITED!!!

Yes, for those of you who don't know already, I am a DIE HARD Pittsburgh Steeler Fan! That's right.... I am . No if's ands, or butts about it.

It can get pretty hairy in our household, what... with Brian being a Vikings fan and all... and last season, it got pretty intense. If ya'll remember.... these two teams met in the playoffs. HAHAHAHAHAHAHA. If there's anyone interested in reading about the outcome of the game, you can read about it HERE. Or I can just remind you guys:

Steelers defeat Vikings, 27-17

I'll leave you guys with a little bit of Football SuperBowl Facts!!
(NOTICE WHO'S ON THE TOP OF THE LIST?!?)

Most Super Bowl Wins!!

Domestic Violence ~ Fundraiser of Sorts

Several months ago, I had the complete honor of befriending a pretty, very highly educated, successful young woman while I was at Starbucks, sitting at an outside table, enjoying one of my all time favorite things in the world ~ Grande Caramel Frappiccino with Caramel around the Cup ~ oh so yummy!!

As we got through talking, she shared some very personal stuff with me. I think she just needed an ear, after all, she'd just had the most horrible week of her entire life. And she didn't know what direction her life would go in the weeks to come.

"Julie" had recently been a victim of Domestic Violence, which resulted in her having to stay at a local Women's Haven for a brief period of time. She's a 36 year old woman who has been married to her high school "sweetheart" for 14 years. Both professionals....both basically "at the top" of their careers.

Did she see this coming? Nope. Had he EVER shown signs of Domestic Violence before? Nope. Clearly, something happened to make "Brett" snap totally out of the blue.

I'd met "Julie" three days after "the" night. "The" night that changed her life. She was still in a state of shock, confusion, devastation and felt totally lost. We talked.... we talked about her job... her career... "Brett"... their family... their dreams... their goals... and how everything about her life was now shattered. And finally, we talked about "the" night.

Fast forward to present time. "Julie" is at a much better place in her life with regard to this incident. Did she and "Brett" make ammends? Well, let's just say that she's forgiven "Brett". They've both been in counseling, and they've come to the conclusion that this act of violence on "Brett's" part has done irreparable damage to their marriage. Try as they might, it's something that just isn't salvagable. "Julie" has been forever scarred and cannot get the feeling of fear out of her system. As much as they love each other, after years of being married, it's all done.

A single act of violence has broken what was once a very sound, loving marriage.

I've learned many things from meeting "Julie". We share a common bond. (Perhaps more than just one) But one of the things I've learned is that a Women's Haven is an awesome resource for victims of Domestic Violence. I've had the opportunity to learn all about their services. How they help victims. It goes well beyond just giving women a roof over their heads. It's an organization consisting of a group of dedicated staff and volunteers who share their time by helping victims of domestic violence and sexual assault.

Their services are designed to empower and support women in their personal decisions. Women are given the opportunity to safety plan and regain control of their lives. Which is exactly what "Julie" did. Or is doing.

I had the opportunity to visit one of the local "safe houses" for women victims of Domestice Violence. They try and make it a very inviting environment for these ladies. Of course, most of these safe houses are run by non-profit organizations and rely on contributions and fundraisers.

I've decided to help out. I'm going donate products for the Kitchens in these safe houses. The way I'm doing this is by having a Pampered Chef Kitchen Show at a local Club House on Friday, August 6th.

All "free credits" earned will be used to purchase various Kitchen Items available from Pampered Chef. Now I know 95% of my blog readers don't know me personally, but YOU CAN HELP.

Please take a minute to browse this website: www.pamperedchef.biz/darcyd .

If you see anything you'd be interested in purchasing for yourself for your own personal use, or for gifts (Christmas is right around the corner you know ~ these make great Christmas Gifts) please email me directly at: cleverconfections@gmail.com

If you'd like to order items for the Safe Houses only, please email me at cleverconfections@gmail.com as well.

My goal is to reach at least a $500 show (which will give us $140 in free Pampered Chef product to donate). To date, I've received $92 in personal orders and $68 in product orders for the Safe Houses.

Any little bit helps!! Thanks for taking the time to help out if you can!! This is a cause I'm really starting to have a passion for and it means alot that I can share this with my readers!!

xoxoxo

Have a wonderful Saturday!!!

Beef Brocolli over Pan Fried Noodles

One of my most favorite things to make is my mom's version of Beef Oyster Sauce over Pan Fried Noodles. It is soooo yummy. I don't have a recipe because I just make it the way my mom used to make it, so please bear with my instructions here!

Here's the ingredients list:

1 lb. Flank Steak, cut into thin one inch strips
Soy Sauce
Chicken Broth (Not sure exactly how much I use, but I'd say it's about(2) 15 oz. cans
Cornstarch
Olive Oil
Oyster Sauce
Brocolli
*Baby Corn
*Water Chestnuts

Here's a photo of the Soy Sauce and Oyster Sauce I used:

So, the first thing you do is..... soak (marinate) the beef with about 1/2 cup of Soy Sauce, 1 can of chicken broth and 2 tbls. of Cornstarch. Let it sit for about 15 minutes.

In a separate bowl, mix approximately 3 tbls. of Cornstarch with 1/2 can of chicken broth. Set aside.

Meanwhile, cut brocolli into bite size pieces. Boil it for approximately 15 minutes, drain.

Heat the Oil in a Wok (or in my case, I use an electric skillet. YES, I KNOW... I'm Asian, and I don't even have a Wok). Heat it so it gets really hot!!! Then add the beef mixture. Be sure to mix it quickly as if stir frying.

Once you have the beef to your desired doneness, ( I prefer more on the Medium side) add the Cornstarch mixture and mix in good.

Add 2 tbls. Oyster Sauce and mix well. Bring to a boil stirring frequently, add the Brocolli, Water Chestnuts and Baby Corn, cover and simmer for approximately 20 minutes.

(The picture below doesn't have the Water Chestnuts & Baby Corn)

There you have it! Yummy Beef Brocolli!! You can serve it over Pan Fried Noodles, or Steamed Rice. I love making extra gravy and have leftovers the next day. Gravy and rice. So yummy!!

You can finish it up with dessert! Like an AWESOME Malted Milk Chocolate CuppyCake!!

DATE DAY THURSDAY

Today for our Date Day Thursday, Brian and I did something a little different!!! We usually start off by getting up bright and early and go to Huckleberry's and have their Early Gator Special which consists of 2 eggs; Hashbrowns; and Toast, biscuit or pancakes for $1.99.

This morning we (okay... I...) decided that we'd skip breakfast at Huckleberrys and instead have a quick one at home. Then..... at about 10 a.m., we'd take Duke and go for a walk. A looonnnnggg walk. (What the heck was I thinking?!?) My thoughts was that we'd go down to the strip mall 'down the street' and stop into Pet Extreme, Target and then have lunch and one of the many restaurants they have around that area. So, that's what we did. Then I thought... oh, while we're all the way over here, let's cross the street and go to the strip mall there! They have Bath & Body Works, TJ Max, Bed Bath & Beyond, and Kohls. So off we went!!!

Then we made our way back home. All the way back home. Like over a mile all the way back home. Needless to say, Duke didn't walk the ENTIRE way. I brought his little Dog Purse (which he loves) and he got to be carried the majority of the 18,395 miles that we walked. (So..that was exaggerating a little)

Here's a photo of Duke snoozing away in his Dog Purse (whatever you call those things) while we were having lunch.

What a little stinker huh?!?

Brian and I did finish off our Date Day Thursday like we used to always do... with $1.50 Margaritas! It was yummy!!

Hope you all had a WONDERFUL Thursday!!

Duke Photo Updates

He likes playing Tug-o-War

This was the very first "toy" that we bought for Duke

But this squeaky toy...this is his FAVORITE

Despite the fact that it's just about his size, he likes to pick it up and drag it from the living room to the dining room.

Then he tuckers out and while dad is taking a nap on the floor he nestles himself right in the crook of Brian's arm.

I found an AWESOME Give Away today!!

We all know that I LOVE Blog surfing. Heck, I love reading blogs, and I follow a ton of 'em as well.

Today I read a handful of blogs that I follow on a regular basis and there's two that were very interesting to me!

The first one is called: A Few of My Favorite Things. Today, she blogged about a very awesome Give Away!! How cute are these?!?

And if you check out her blog, you'll have the opportunity to enter her GIVEAWAY!!! This is a great Giveaway in that it's not only a CUTE product, but she's giving away TWO sets!! Yay!!

I've entered!! Yeah, yeah, yeah... Brian and I are done with babies and all (with the exception of our newest addition to our family this past weekend).

I'm so excited for a chance to win because a very close couple that we know just shared with us on Saturday that they're expecting their second child!! Woo Hoo! And, what makes it so much more exciting for Brian and I is that we're going to be that baby's Godparents!! :)

If it isn't in the cards for me to win the GiveAway, I know I'll be purchasing the set of Sticky Bellies!!
~~~~~~~~~~~~~~~~~~~~~~~~~~~~
The second blog that I found totally interesting in is called Slam Dunks. This particular Blogger writes about 'True Crime' per se, and her perspective of a particular case. She also focuses on Missing Persons.
I have a degree in Criminal Justice with a minor in Behavioral and Social Sciences, (I'm a Cake Decorator/Event Coordinator.....go figure) and so blogs like these interest me tremendously!!!
This particular post, is interesting to me because I love the way she correlates all the facts. :)
You all should read her blog periodically. It's very interesting!!!
I think I'm going to do this on a regular basis on Mondays! Share with you all what interesting blogs I've come across! Lucky you guys huh?!?
And, I'm also planning on doing my very own GiveAways again in the very near future! These will be very easy GiveAways though, so be on the lookout!!!
Happy Monday!!!!
